Ingredients
  

Potatoes & Seasoning
  • 2 lbs small yellow or baby potatoes washed and dried
  • 0.5 cup unsalted butter melted
  • 2 tbsp olive oil
  • 5 cloves garlic minced
  • 0.5 tsp garlic powder
  • 1 tsp salt
  • 0.5 tsp black pepper
Toppings
  • 0.5 cup Parmesan cheese finely grated
  • 0.25 cup fresh parsley chopped

  • Mixing bowl

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash potatoes and cut them in half lengthwise. Score the cut side in a cross-hatch pattern.
  3. In a small bowl, whisk together melted butter, olive oil, minced garlic, garlic powder, salt, and pepper.
  4. Toss potatoes with two-thirds of the garlic butter mixture until fully coated.
  5. Place potatoes cut-side down on a baking sheet and roast for 25-30 minutes until golden.
  6. Flip potatoes over, brush with remaining garlic butter, and sprinkle with Parmesan cheese.
  7. Roast for another 10-15 minutes until cheese is bubbly and edges are crispy.
  8. Garnish with fresh parsley and serve immediately.

Notes

For extra crispiness, use a metal baking sheet rather than glass.
