Ingredients
  

Dough
  • 4 cups bread flour
  • 2 tsp instant yeast
  • 2 tsp kosher salt
  • 2 cups warm water approx 110°F
  • 1 tsp honey
  • 4 tbsp extra virgin olive oil divided for bowl and pan
Toppings
  • 3 cloves garlic minced
  • 2 tbsp butter melted
  • 0.5 cup Parmesan cheese freshly grated
  • 1 tbsp fresh rosemary chopped
  • 1 tsp flaky sea salt Maldon style

Equipment

  • 9x13 Baking Pan
  • Large mixing bowl
  • Spatula
  • Wire rack

Method
 

  1. Whisk warm water, honey, and yeast in a large bowl. Let sit for 5 minutes.
  2. Add flour and salt. Mix with a spatula until a sticky dough forms and no dry flour remains.
  3. Drizzle dough with olive oil, cover, and refrigerate for 12-24 hours.
  4. Pour 3 tbsp olive oil into a 9x13 inch baking pan. Transfer dough to the pan, turning once to coat in oil.
  5. Let dough rise in a warm spot for 2-4 hours until it fills the pan and is bubbly.
  6. Preheat oven to 425°F (220°C).
  7. Dimple the dough deeply with oiled fingers. Brush with melted butter and garlic mixture.
  8. Top with grated Parmesan, rosemary, and flaky sea salt.
  9. Bake for 22-28 minutes until deep golden brown and crispy.
  10. Transfer immediately to a wire rack to cool before slicing.

Notes

Use a metal pan for the crispiest bottom crust.
