Method
- Whisk warm water, honey, and yeast in a large bowl. Let sit for 5 minutes.
- Add flour and salt. Mix with a spatula until a sticky dough forms and no dry flour remains.
- Drizzle dough with olive oil, cover, and refrigerate for 12-24 hours.
- Pour 3 tbsp olive oil into a 9x13 inch baking pan. Transfer dough to the pan, turning once to coat in oil.
- Let dough rise in a warm spot for 2-4 hours until it fills the pan and is bubbly.
- Preheat oven to 425°F (220°C).
- Dimple the dough deeply with oiled fingers. Brush with melted butter and garlic mixture.
- Top with grated Parmesan, rosemary, and flaky sea salt.
- Bake for 22-28 minutes until deep golden brown and crispy.
- Transfer immediately to a wire rack to cool before slicing.
Notes
Use a metal pan for the crispiest bottom crust.
