  • 1 pound bulk pork breakfast sausage mild or hot, cooked and drained
  • 1 package frozen shredded hashbrowns 16 oz, thawed and squeezed dry
  • 2 cups shredded cheddar cheese sharp or mild
  • 2 large eggs lightly beaten
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder optional

Method
 

  1. Prepare Sausage: Cook and crumble the bulk sausage until fully browned. Drain off all excess grease thoroughly and set aside to cool.
  2. Prep Hashbrowns: Ensure thawed hashbrowns are completely dry by squeezing out all excess moisture using a clean kitchen towel.
  3. Mix the Base: In a large bowl, combine the cooled sausage, dry hashbrowns, shredded cheddar cheese, beaten eggs, salt, pepper, and garlic powder. Mix thoroughly until dense and sticky.
  4. Shape the Bites: Roll the mixture into uniform balls (about 1.5 inch size). Place on a parchment-lined baking sheet.
  5. Bake: Preheat oven to 400°F (200°C). Bake for 18-25 minutes, or until golden brown on the outside and the internal cheese is melted and gooey.
  6. Serve: Let cool slightly and serve immediately while the exterior is crispy and the interior is gooey. Serve with a thick dipping sauce if desired.

Notes

Bites can be frozen unbaked. Freeze for 1-2 hours until solid, then transfer to a freezer bag. Bake from frozen, increasing the time by 5-10 minutes. For best crispiness, squeeze hashbrowns thoroughly.
