- Roast Sprouts: Preheat oven to 400°F (200°C). Toss halved sprouts with olive oil, salt, and pepper. Spread in a single layer, cut-side down, on a parchment-lined baking sheet.
- Bake: Roast for 20-30 minutes, tossing halfway, until golden brown, tender, and the edges are crispy/charred. Do not overcrowd the pan.
- Make Glaze: While sprouts roast, combine balsamic vinegar, honey, brown sugar (if using), and soy sauce (if using) in a small saucepan. Bring to a simmer over medium heat.
- Reduce: Reduce heat to low and simmer for 8-12 minutes, stirring occasionally, until the mixture reduces by half and thickens to a heavy, gooey consistency that coats the back of a spoon.
- Glaze and Serve: Immediately transfer the hot, crispy sprouts to a large bowl. Pour the thick, glossy honey balsamic glaze over them and toss quickly until evenly coated. Serve immediately.
Notes
Ensure sprouts are dry before tossing in oil for maximum crispiness. The glaze should be added immediately after roasting for the best sticky coating. For easy cleanup, use parchment paper.
