Method
- Whisk buttermilk and spices in a bowl. Add chicken thighs and marinate for at least 1 hour.
- Prepare dredge by mixing flour, cornstarch, baking powder, and dry spices. Drizzle in 2 tbsp of marinade to create clumps.
- Heat oil in a heavy pot to 350°F (175°C).
- Dredge chicken in flour mixture, pressing firmly to coat. Shake off excess.
- Fry chicken for 6-8 minutes until golden brown and internal temp reaches 165°F. Drain on a wire rack.
- Mix honey, hot sauce, and melted butter. Brush over hot chicken.
- Assemble on toasted brioche buns with pickles and creamy coleslaw.
Notes
For extra crunchy chicken, double dip: flour -> buttermilk -> flour. Monitor oil temp closely to prevent burning.
