Ingredients
  

Chicken Marinade
  • 1.5 lbs chicken tenderloins
  • 1 cup buttermilk
  • 1 tsp garlic powder
  • 0.5 tsp salt
Breading
  • 2 cups panko breadcrumbs
  • 1 cup all-purpose flour
  • 2 eggs large, beaten
  • 1 tbsp smoked paprika
  • 1 tsp onion powder
  • 2 cups vegetable oil for frying
Hot Honey Mustard Sauce
  • 0.5 cup yellow mustard
  • 0.33 cup honey
  • 0.25 cup mayonnaise
  • 1 tbsp hot sauce optional

  • Heavy bottomed skillet
  • 3 Shallow bowls
  • Wire rack

Method
 

  1. Marinate chicken in buttermilk, salt, and garlic powder for 30 minutes in the fridge.
  2. Whisk together mustard, honey, mayonnaise, and hot sauce in a bowl. Refrigerate.
  3. Prepare 3 bowls: one with seasoned flour, one with beaten eggs, one with seasoned panko.
  4. Dredge chicken in flour, dip in egg, then press into panko to coat thoroughly.
  5. Heat oil in a skillet to 350°F (175°C).
  6. Fry chicken in batches for 3-4 minutes per side until golden brown and cooked through.
  7. Drain on a wire rack and season immediately with a pinch of salt.
  8. Stack on a plate, drizzle generously with sauce, and garnish with parsley and sesame seeds.

Notes

Ensure oil temperature remains steady between batches to prevent greasiness. Serve with extra sauce on the side.
