Ingredients
  

Potato Mixture
  • 3 cups mashed potatoes chilled
  • 1 cup cheddar cheese shredded
  • 0.25 cup chives chopped
  • 0.5 tsp garlic powder
  • 1 pinch salt and pepper
Breading & Frying
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 2 cups Panko breadcrumbs
  • 2 cups vegetable oil for frying
Garlic Aioli & Garnish
  • 0.5 cup mayonnaise
  • 1 clove garlic minced
  • 1 tsp lemon juice
  • 1 tbsp parsley chopped
  • 2 tbsp Parmesan cheese grated

Method
 

  1. In a large bowl, mix cold mashed potatoes, cheese, chives, garlic powder, salt, and pepper until combined.
  2. Scoop mixture and roll into golf-ball sized spheres. Place on a baking sheet.
  3. Freeze the balls for 15-20 minutes to firm them up.
  4. Prepare three bowls: one with flour, one with beaten eggs, and one with Panko breadcrumbs.
  5. Dredge each ball in flour, dip in egg, then coat thoroughly in breadcrumbs.
  6. Heat oil in a deep pan to 350°F (175°C).
  7. Fry balls in batches for 3-4 minutes until golden brown. Drain on a wire rack.
  8. Whisk mayonnaise, garlic, and lemon juice together to make the aioli.
  9. Drizzle aioli over the hot potato balls and garnish with parsley and Parmesan.

Notes

Ensure the oil temperature stays consistent between batches. If using leftover mashed potatoes that are very creamy, add a little flour to the potato mix to help it hold its shape.
