Method
- Combine the cooked lentils, mashed sweet potato, flour, cilantro, paprika, cumin, cayenne, salt, pepper, and 1 tbsp oil in a large bowl. Mix thoroughly until a uniform, heavy gooey consistency is achieved.
- Form the mixture into 8-10 patties, about 3/4 inch thick. Lightly dust with extra flour or breadcrumbs and chill for 15 minutes.
- To Pan-Fry: Heat 2 tbsp oil over medium heat. Cook patties 4-5 minutes per side until deep golden and firm (uneven browning is expected).
- To Bake: Place on an oiled baking sheet. Bake at 400°F (200°C) for 15-20 minutes, flipping once.
- Make the Sauce: Blend all sauce ingredients in a food processor, adding water/milk until the sauce is completely smooth with a thick, heavy viscous consistency.
- Serve the warm, crispy patties immediately with a generous, gooey dollop of the Creamy Avocado Cilantro Sauce.
Notes
Ensure the cooked red lentils are well-drained. Patties can be frozen raw between layers of parchment paper for up to 3 months. Thaw before cooking.
