- Grease a 9x13 inch baking dish. Tear croissants into 2-inch chunks and arrange evenly in the dish.
- Melt butter in a skillet over medium heat. Sauté shallots for 3 minutes, then add garlic and cook for 1 minute.
- Add spinach to the skillet and cook until wilted and liquid has evaporated. Remove from heat.
- Scatter spinach mixture, shredded Gruyere, and crumbled Feta over the croissant pieces. Toss gently to combine.
- In a large bowl, whisk eggs, milk, cream, Dijon, nutmeg, salt, and pepper until smooth.
- Pour custard over the croissant mixture. Press down gently to soak. Cover and refrigerate for at least 30 minutes (or overnight).
- Preheat oven to 350°F (175°C). Uncover dish and bake for 45-55 minutes until golden brown and set.
- Let stand for 10-15 minutes before serving.
Notes
For best results, use day-old croissants. If using frozen spinach, squeeze out all excess moisture before adding.
