Ingredients
  

Graham Cracker Crust
  • 1.5 cups graham cracker crumbs
  • 0.33 cup granulated sugar
  • 6 tbsp unsalted butter melted, with droplets reserved for edges
Pumpkin Cheesecake Filling
  • 24 oz cream cheese full-fat block style, softened, at room temperature
  • 1 cup granulated sugar
  • 0.25 cup light brown sugar packed
  • 1 tbsp all-purpose flour
  • 1 cup pumpkin puree 100% pure, at room temperature
  • 1.5 tsp pumpkin spice blend of cinnamon, ginger, cloves, nutmeg
  • 1 tsp pure vanilla extract
  • 3 large eggs at room temperature
Fox Face Decoration & Glistening Glaze
  • 24 small pointy cookie or cake pieces trimmed, for ears
  • 0.5 cup white frosting vanilla, in a piping bag with small tip
  • 0.25 cup dark chocolate or chocolate frosting melted, in a piping bag with tiny tip
  • 2 tbsp melted butter for glaze, to produce maximum shine and gloss effect
  • 0.5 tsp pumpkin spice for glaze
  • 1 tbsp cream or milk for glaze

Method
 

  1. Preheat oven to 325°F (165°C). Line a 9-inch springform pan with parchment paper and wrap the exterior with heavy-duty aluminum foil to make it watertight. Boil a pot of water.
  2. Combine graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of the prepared pan and freeze for 15 minutes.
  3. Beat softened cream cheese on low speed until perfectly smooth. Scrape the bowl frequently. Add granulated sugar, brown sugar, and flour, mixing until incorporated.
  4. Add pumpkin puree, pumpkin spice, and vanilla, mixing on low speed until combined.
  5. Add room-temperature eggs one at a time on low speed, allowing each to incorporate without overbeating.
  6. Pour batter into the crust and place the springform pan into a deep roasting pan. Pour boiling water into the roasting pan until it reaches halfway up the side of the springform pan. Bake for 55 to 65 minutes until the edges are set and center is slightly jiggly.
  7. Turn off the oven, prop the door open with a wooden spoon, and let the cheesecake cool gradually for one hour inside. Remove, cool to room temperature on a wire rack, and refrigerate for at least 4 hours (ideally overnight).
  8. Slice the chilled cheesecake into 12 triangles using a hot, clean knife (dipped in hot water and wiped clean between every slice).
  9. Prepare ear pieces with white frosting centers and outlines. Gently press two into the wide back edge of each slice.
  10. Pipe dark chocolate for the winking eyes and nose. Create a messy chocolate drip down the sides. Drench the final, glistening glaze of warm butter, pumpkin spice, and cream over the entire face to make it gisten like liquid glass.

Notes

Ensuring all ingredients are at room temperature is the single most important factor for a smooth, lump-free cheesecake. Do not rush the cooling or chilling process. Use a water bath for the coveted fudgy-smooth texture and a polished finish with a maximum shine and gloss effect.
