Dark Cottagecore Clam Chowder Pot Pies

Ingredients
  

Chowder Filling Base
  • 4 slices thick-cut bacon chopped, or 4 oz salt pork
  • 1 large yellow onion finely diced
  • 2 stalks celery finely diced
  • 3 large Russet potatoes peeled and cubed, approx. 3 cups
  • 13 oz canned chopped clams 2 (6.5 oz) cans, juice reserved
  • 2 cups clam juice including juice from cans
  • 4 tbsp unsalted butter divided
  • 0.5 cup all-purpose flour
  • 1 cup heavy cream
  • 1 cup whole milk
  • 2 sprigs fresh thyme leaves removed
  • 1 tsp Worcestershire sauce
  • 1 tsp black pepper freshly ground preferred
  • 0.5 tsp salt adjust to taste
Pastry Dome
  • 1 sheet pre-rolled puff pastry thawed
  • 1 large egg for egg wash

Method
 

  1. Thaw puff pastry. Preheat oven to 400°F (200°C). Spray 4–6 rustic ramekins with non-stick spray.
  2. In a large Dutch oven, cook chopped bacon over medium heat until crispy. Remove bacon with a slotted spoon to a side plate, leaving the fat in the pot.
  3. Add diced onion and celery to the pot. Sauté in bacon fat for 5–7 minutes until soft and translucent.
  4. Add the remaining butter to the pot and melt. Sprinkle in all-purpose flour. Cook this roux for 2–3 minutes, stirring constantly.
  5. Slowly stream in the clam juice while whisking vigorously to avoid lumps. Bring the mixture to a simmer.
  6. Add cubed potatoes, fresh thyme leaves, Worcestershire sauce, black pepper, and salt. Reduce heat to low, cover, and simmer for 15 minutes, or until potatoes are fork-tender.
  7. Remove from heat. Add the chopped clams, reserved bacon, heavy cream, and whole milk. Stir gently until thoroughly combined.
  8. Ladle the chowder into the prepared ramekins, filling close to the top but leaving 1/2 inch of space. Let filling cool slightly.
  9. Brush the rim of each ramekin with an egg wash (egg whisked with 1 tbsp water). Place a cold puff pastry circle over each ramekin, pressing gently on the overhang to seal.
  10. Brush the top of each pastry circle with remaining egg wash. Bake for 18–22 minutes, or until the pastry is puffed and golden-brown.
  11. Cool for 5 minutes before serving.

Notes

For the best puff pastry 'dome', your filling must not be piping hot, and your pastry circles must be cold when they go into the oven. Prepare the chowder filling up to two days in advance for deeper flavor and an easier prep on baking day.
