- Preheat oven to 350°F (175°C). Rub the inside of a baking dish with the cut garlic clove and grease generously with butter.
- Peel and slice potatoes 1/8-inch thick using a mandoline. Do not rinse the slices.
- In a saucepan, combine cream, milk, minced garlic, thyme, nutmeg, salt, and pepper. Bring to a simmer, then steep for 10 minutes. Remove thyme.
- Layer half the potatoes in the dish. Pour over half the warm cream mixture and sprinkle with half the Gruyère.
- Layer remaining potatoes and pour over remaining cream. Press down gently.
- Top with remaining Gruyère and Parmesan cheese.
- Cover with foil and bake for 40 minutes.
- Remove foil and bake for 20-30 more minutes until golden brown and bubbly.
- Let rest for 15-20 minutes before serving to allow sauce to set.
Notes
Using a mandoline ensures even cooking. The resting time is crucial for the texture.
