Ingredients

Brownie Base
  • 1 box fudgy brownie mix plus ingredients called for on box (eggs, oil, water)
  • 1 cup crushed Oreo cookies or similar chocolate sandwich cookies
Creamy Filling (Middle Layer)
  • 8 oz cream cheese softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped topping or whipped heavy cream
Chocolate Glaze Topping (The Gooey Layer)
  • 0.5 cup heavy cream
  • 1 cup semi-sweet chocolate chips for **thick, gooey, viscous** glaze
  • 1 tbsp unsalted butter
  • 0.5 cup crushed Oreo cookies for topping, extra **gooey** when embedded

Equipment

  • 9x13 inch baking pan
  • Large mixing bowls
  • Saucepan or microwave-safe bowl

Method

  1. Prepare Brownie Base: Preheat oven to 350°F (175°C). Prepare brownie mix according to package directions for a 9x13 inch pan. Before baking, gently fold in 1 cup of crushed Oreos. Pour batter into a greased 9x13 inch pan.
  2. Bake Brownies: Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with moist crumbs (not wet batter). You want a fudgy, **gooey** brownie base. Let cool completely on a wire rack.
  3. Make Creamy Filling: In a medium bowl, beat softened cream cheese until smooth. Beat in powdered sugar and vanilla extract until well combined. Gently fold in the whipped topping until no streaks remain. This creates a light, **creamy, viscous filling**.
  4. Assemble Layers: Once the brownie is completely cool, spread the creamy filling evenly over the top. Chill in the refrigerator for at least 15 minutes while you prepare the glaze.
  5. Prepare Chocolate Glaze: In a small saucepan over medium-low heat, or in a microwave-safe bowl, heat the heavy cream until just simmering. Remove from heat and immediately stir in the chocolate chips and butter. Let sit for 5 minutes, then whisk until smooth and glossy. The glaze should be beautifully **thick, gooey, and viscous**.
  6. Finish and Chill: Pour the warm chocolate glaze evenly over the chilled creamy filling. Quickly sprinkle the remaining 1/2 cup of crushed Oreos over the top, gently pressing them into the **gooey glaze**. Refrigerate for at least 1-2 hours, or until the glaze is set. For best slicing, chill for 4 hours or overnight.
  7. Slice and Serve: Once completely chilled and set, use a sharp knife (wiping it clean between cuts) to slice into squares. Serve chilled, enjoying the rich, **gooey layers**.

Notes

Using quality chocolate for the glaze makes a big difference in flavor and **gooey texture**. For extra fudginess in the brownie layer, slightly underbake it. These bars are best stored in an airtight container in the refrigerator and can be made a day in advance.
