- Preheat oven to 400°F (200°C). On a baking sheet, toss butternut squash and Brussels sprouts with 3 tbsp olive oil, salt, and pepper.
- Roast for 20-25 minutes, tossing once, until tender and caramelized.
- While vegetables roast, cook farfalle pasta in a large pot of salted boiling water until al dente.
- Before draining, reserve 1 cup of starchy pasta water. Drain pasta.
- In a large skillet over medium-high heat, heat 1 tbsp olive oil. Add sliced sausage and cook until browned on both sides.
- Reduce heat to medium. Add sliced garlic and cook for 1-2 minutes until fragrant. Stir in thyme, rosemary, and red pepper flakes.
- Add the cooked pasta, roasted vegetables, and 0.5 cup Parmesan cheese to the skillet.
- Toss to combine, adding 0.5 cup of reserved pasta water to create a light sauce. Add more water as needed.
- Taste and season with salt and pepper. Serve immediately, garnished with fresh parsley and extra Parmesan.
Notes
Don't overcrowd your vegetable baking sheet! Use two if you need to, to ensure they roast and caramelize, not steam.
