Delicious Chocolate-Filled Crepes

Ingredients
  

Crepe Batter
  • 3 large eggs
  • 500 ml milk whole milk preferred
  • 250 grams flour all-purpose
  • 100 grams butter melted
  • 1 packet vanilla sugar optional (or 1 tsp vanilla extract + 1 tbsp sugar)
Filling
  • 1 cup chocolate hazelnut spread or melted chocolate, for filling and drizzling

Equipment

  • Electric Mixer or Blender
  • Non-stick Skillet or Crepe Pan
  • Flexible Spatula

Method
 

  1. In a large bowl or blender, combine the eggs, milk, flour, melted butter, and vanilla sugar. Blend with an electric mixer until the batter is completely smooth and lump-free.
  2. Cover the batter and let it rest at room temperature for at least 30 minutes to allow the flour to hydrate and the gluten to relax.
  3. Heat a non-stick pan or crepe pan over medium heat. Lightly butter the pan for the first crepe.
  4. Pour about 1/4 to 1/3 cup of batter into the center of the pan, immediately tilting and swirling the pan in a circular motion to coat the bottom evenly.
  5. Cook for 1-2 minutes until the edges are golden and lift easily from the pan.
  6. Using a thin spatula, gently flip the crepe and cook the other side for another 30-60 seconds.
  7. Transfer the cooked crepe to a plate. Repeat with the remaining batter.
  8. Fill each crepe generously with chocolate spread, roll them tightly, and drizzle extra chocolate over the top before serving.

Notes

Resting the batter is critical. Do not skip the 30-minute resting period, or the crepes may turn out rubbery instead of tender.
