Delicious Maple Cranberry Butter

Ingredients
  

Fruit Base
  • 4 cups fresh or frozen cranberries
  • 1 cup apple cider or apple juice
Flavorings
  • 0.75 cup pure maple syrup
  • 0.25 cup brown sugar packed
  • 1 orange zested and juiced (approx 2 tbsp juice)
  • 1 tsp ground cinnamon
  • 0.125 tsp ground cloves
  • 1 tsp vanilla extract
  • 1 pinch salt

  • Fine-mesh sieve
  • Glass jars

Method
 

  1. Combine cranberries, apple cider, maple syrup, brown sugar, orange juice, orange zest, cinnamon, cloves, and salt in a saucepan.
  2. Bring to a boil over medium-high heat until cranberries pop.
  3. Reduce heat to low and simmer for 15-20 minutes until berries are completely soft.
  4. Remove from heat. Blend until smooth using an immersion blender or standard blender.
  5. Optional: Press mixture through a fine-mesh sieve to remove seeds/skins for a smoother texture.
  6. Return puree to the pot. Stir in vanilla extract.
  7. Simmer on low for another 15-20 minutes, stirring often, until thickened to a spreadable consistency.
  8. Cool completely before transferring to jars. Store in the refrigerator.

Notes

Makes excellent gifts when packed in small mason jars with a ribbon.
