Ingredients
  

The Vibrant Mocktail Base
  • 1 cup prickly pear juice pure, unsweetened, must be cold
  • 1 cup sparkling water unflavored or light citrus, must be cold
  • 1 large fresh lime for 2 tbsp fresh juice
  • 1 tsp pure vanilla extract optional, but highly recommended
  • 0.5 cup granulated sugar for sweetening, or natural sweetener to taste
The Essential Garnish and Rim
  • 2 tbsp coarse sea salt or Margarita salt
  • 1 tbsp granulated sugar for mixing with salt
  • 1 wedge lime for the rim
  • various lime slices for garnish
  • various mini green-and-white straws
  • various edible glitter optional, for extra shimmer

Method
 

  1. Ensure all liquid ingredients are cold before beginning.
  2. Prepare the Rim: In a small flat dish, mix coarse sea salt and 1 tablespoon granulated sugar together. Set aside.
  3. Juice the Limes: Squeeze 2 tablespoons of fresh lime juice from your lime.
  4. Prepare the Base: In a large pitcher, whisk together prickly pear juice, 2 tablespoons fresh lime juice, vanilla extract (if using), and your preferred amount of granulated sugar to taste. Stir until sugar is fully dissolved and the mixture is smooth. Chill.
  5. Rim the Glasses: Rub the cut side of a lime wedge around the top outer edge of your glasses. Dip the wet rim into your prepared salt/sugar mixture, turning the glass slightly for an even coat. Let set for 5-10 minutes before filling.
  6. Assemble: Add generous ice to your rime-coated glasses. Pour your chilled prickly pear-lime base mixture over the ice.
  7. Finish: Just before serving, top off each glass with sparkling water.
  8. Garnish with a final fresh lime wedge and add a mini green-and-white straw. Serve cold and enjoy every sip!

Notes

This recipe requires cold ingredients. For a professional-looking rim like the picture, let it set for 10 minutes before filling. Use pure, unsweetened prickly pear juice for the best flavor and color.
