Ingredients
  

Chicken and Marinade
  • 1 lb Chicken Breast Cut into bite-sized strips
  • 1 cup Dill Pickle Juice For brining
  • 1 cup All-Purpose Flour
  • 0.5 cup Panko Breadcrumbs
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 0.5 tsp Cayenne Pepper Optional
  • 2 cups Vegetable Oil For frying
Creamy Dill Sauce
  • 0.5 cup Mayonnaise
  • 0.25 cup Sour Cream
  • 2 tbsp Fresh Dill Finely chopped
  • 1 tbsp Pickle Juice
  • 1 clove Garlic Minced
Taco Assembly
  • 8 Small Tortillas Flour or Corn
  • 1 cup Iceberg Lettuce Shredded
  • 1 cup Dill Pickle Slices
  • 0.5 cup Crispy Fried Onions Store-bought

Equipment

Method
 

  1. Place the cut chicken pieces in a bowl and pour the 1 cup of dill pickle juice over them. Marinate in the refrigerator for 30 minutes to 4 hours.
  2. In a shallow dish, whisk together the flour, panko breadcrumbs, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
  3. Remove the chicken from the brine, letting excess drip off. Dredge the chicken in the flour mixture until fully coated. Let rest on a wire rack for 5 minutes.
  4. In a small bowl, whisk together mayonnaise, sour cream, fresh dill, 1 tbsp pickle juice, and minced garlic to make the sauce. Refrigerate until ready to use.
  5. Heat vegetable oil in a skillet over medium-high heat (350°F). Fry the chicken pieces in batches for 3-4 minutes per side until golden brown and cooked through (165°F internal temp). Drain on paper towels.
  6. Warm the tortillas in a dry skillet for about 30 seconds per side.
  7. Assemble the tacos by layering shredded lettuce, crispy chicken, pickle slices, a drizzle of dill sauce, and crispy fried onions on each tortilla. Serve immediately.

Notes

To make these in the air fryer, spray the breaded chicken with oil and air fry at 380°F for 10-12 minutes, flipping halfway.
