- Lightly pat the whole dill pickles dry with a paper towel, then finely chop them until you have 1 cup.
- In a medium mixing bowl, combine the plain Greek yogurt, pickle brine, garlic powder, onion powder, and black pepper. Stir until smooth.
- Fold in the chopped dill pickles and minced fresh dill until evenly distributed.
- Taste the dip and adjust the seasoning, adding salt or an extra splash of pickle juice if desired.
- Cover the bowl tightly and refrigerate for at least 1 hour (ideally 2-4 hours) to allow the flavors to meld and develop.
- Give the dip a quick stir before serving. Garnish with a sprig of fresh dill and extra chopped pickles.
- Serve chilled with potato chips, pretzels, or fresh vegetable sticks.
Notes
Do not use sweet pickles or sweet relish for this recipe; the flavor profile requires the savory, vinegary bite of Kosher dill pickles. If the dip gets watery in the fridge over the next few days, simply stir it back together.
