Ingredients
  

For the Spiced Cookie
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground cardamom
  • 0.5 tsp ground ginger
  • 0.25 tsp ground cloves
  • 1 tbsp espresso powder or strong instant coffee
  • 0.5 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 0.25 cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
For the Coffee-Chai Glaze
  • 1.5 cups powdered sugar
  • 3-4 tbsp strong brewed coffee or espresso cooled
  • 0.25 tsp ground cinnamon

Method
 

  1. Combine dry ingredients, spices, and espresso powder. Set aside.
  2. Cream butter and sugars until light. Beat in egg and vanilla.
  3. Gradually mix in dry ingredients until just combined.
  4. Bake cookies at 350°F (175°C) for 9-11 minutes. Cool completely.
  5. Make Glaze: Whisk powdered sugar, cooled coffee, and cinnamon until a thick, viscous icing forms.
  6. Drizzle the thick gooey icing over the cooled cookies. Let set completely before serving.

Notes

Use strong coffee for the glaze for maximum flavor. Use fresh spices for the best aroma. The cookies should still be very soft when removed from the oven for a chewy texture.
