Ingredients
  

  • 2 lbs starchy potatoes Russet or Yukon Gold, peeled and cubed
  • 0.25 cup unsalted butter melted (4 tablespoons)
  • 2 large egg yolks
  • 0.25 cup whole milk or heavy cream warmed
  • 0.5 tsp salt
  • 0.25 tsp white pepper or black pepper
  • Pinch freshly grated nutmeg optional
  • 2 tbsp grated Parmesan cheese optional
  • Fresh thyme or chives chopped, for garnish (optional)

  • Large star tip (e.g., Ateco 826, Wilton 1M)

Method
 

  1. Place peeled and cubed potatoes in a large pot. Cover with cold, salted water. Bring to a boil, then simmer 15-20 minutes until fork-tender.
  2. Drain potatoes thoroughly. Return to the hot pot over low heat for 1-2 minutes, shaking gently, to dry completely.
  3. Mash potatoes immediately using a ricer or masher until smooth. Add melted butter, egg yolks, warmed milk/cream, salt, pepper, and nutmeg (if using). Mix gently until just combined. Stir in Parmesan if desired.
  4. Transfer potato mixture to a piping bag fitted with a large star tip. Line a baking sheet with parchment paper.
  5. Pipe individual rosettes onto the prepared baking sheet, leaving space between each. Refrigerate for at least 30 minutes (optional, but recommended).
  6. Preheat oven to 400°F (200°C).
  7. Bake for 20-25 minutes, or until golden brown and lightly crispy. Optionally, broil for 1-2 minutes for extra browning (watch carefully!).
  8. Garnish with fresh thyme or chives, if desired, and serve immediately.

Notes

For best results, use starchy potatoes and ensure they are thoroughly drained and mashed while hot. Chilling the piped rosettes helps them hold their shape better during baking.
