Festive, no-bake truffles made from crushed Oreos and cream cheese, coated in beautiful pastel-colored chocolate and topped with sprinkles for the perfect spring treat.

Ingredients
  

Truffle Center
  • 14.3 oz Standard Chocolate Sandwich Cookies (Oreos) about 36 cookies
  • 8 oz Full-fat Cream Cheese softened to room temperature
Coating & Decoration
  • 1.5 lbs Pastel Candy Melts assorted colors (pink, blue, yellow, purple)
  • 0.5 cup White Candy Melts or White Chocolate for drizzling
  • 2 tbsp Coconut Oil or Shortening optional, for thinning chocolate
  • 2 tbsp Rainbow Nonpareils or spring sprinkles

  • Food processor (or rolling pin and zip-top bag)
  • Large mixing bowl
  • Baking sheet
  • Parchment paper
  • Microwave-safe bowls
  • Dipping Fork

Method
 

  1. Pulse the entire package of Oreo cookies in a food processor until they form fine, even crumbs.
  2. In a large bowl, mix the crushed cookie crumbs with the softened cream cheese until a solid, uniform dark dough forms with no white streaks.
  3. Roll the mixture into 1-inch balls (about 1 tablespoon each) and place them on a parchment-lined baking sheet. Optional: shape them slightly oval to resemble eggs.
  4. Chill the rolled balls in the freezer for 15-20 minutes, or the refrigerator for 1 hour, until firm but not frozen solid.
  5. Melt the pastel candy melts in separate bowls in the microwave at 50% power in 30-second intervals, stirring until smooth. Add a little coconut oil if the mixture is too thick.
  6. Using a fork, dip each chilled ball into the melted chocolate to coat completely. Tap the fork on the edge of the bowl to remove excess, then slide back onto the parchment paper.
  7. Melt the white chocolate, place in a piping bag or zip-top bag with the corner snipped, and drizzle over the coated truffles.
  8. Immediately add sprinkles to the wet white chocolate drizzle. Return to the refrigerator for 15 minutes to set completely before serving.

Notes

Ensure your cream cheese is completely at room temperature before mixing to avoid white lumps in your truffle centers.
