Ingredients
  

Burger Bowl Base
  • 1 lb ground beef lean
  • 1.5 lbs yellow potatoes cubed
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 pinch salt and pepper
Toppings
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 0.5 cup red onion sliced or pickled
Special Sauce
  • 0.5 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tsp yellow mustard
  • 1 tbsp pickle relish or chopped pickles
  • 0.5 tsp paprika

Equipment

  • Large skillet

Method
 

  1. Preheat oven to 400°F (200°C). Toss cubed potatoes with olive oil, salt, pepper, and paprika.
  2. Spread potatoes on a baking sheet and roast for 20-25 minutes until golden and crispy.
  3. While potatoes roast, heat a skillet over medium-high heat. Add ground beef and season with garlic powder, onion powder, salt, and pepper.
  4. Cook beef, breaking it up with a spoon, until browned and cooked through (approx 7-8 mins).
  5. Whisk together mayonnaise, ketchup, mustard, relish, and paprika to make the special sauce.
  6. Assemble bowls: Start with lettuce, add roasted potatoes, cooked beef, tomatoes, cucumbers, and onions.
  7. Drizzle generously with the special sauce and serve warm.

Notes

You can use air fryer potatoes: cook at 400°F for 15 minutes, shaking the basket halfway through.
