Ingredients
  

Energy Bomb Mixture
  • 1.25 cups rolled oats
  • 0.5 cup peanut butter creamy or crunchy
  • 0.33 cup honey or maple syrup
  • 0.25 cup chopped dates or dried craisins
  • 0.25 cup chocolate chips mini chips preferred
  • 2 tbsp chia seeds or flaxseeds, or hemp seeds
  • 1 tsp pure vanilla extract

Equipment

  • Large mixing bowl
  • Wooden Spoon or Spatula
  • Cookie scoop
  • Airtight Container

Method
 

  1. Mix all of the ingredients (rolled oats, peanut butter, honey, dates/craisins, chocolate chips, seeds, and vanilla extract) together in a large mixing bowl until well combined.
  2. Place the bowl in the refrigerator for 30 minutes to set. This makes the dough much easier to roll.
  3. Remove the bowl from the refrigerator and portion the dough into balls of your desired size. Use a cookie scoop to make them approximately 1 inch in diameter, rolling them firmly between your palms.
  4. Store leftover energy balls in an airtight container in the refrigerator for up to 2 weeks, or freeze them for up to 3 months.

Notes

If the mixture feels too dry to roll, add a little more peanut butter or a splash of water. If it is too wet, add more oats.
