- If using a grill, soak your wooden skewers in water for at least 30 minutes to prevent burning. Cut the zucchini into uniform 1-inch cubes.
- Thread the zucchini cubes onto the soaked skewers, leaving a small space between each piece. You should get 8 skewers.
- Prepare the garlic butter: In a small saucepan over low heat, melt the butter. Stir in the minced garlic, chopped parsley, salt, and pepper. Cook for 1 minute until fragrant. Remove from heat.
- Preheat your grill or grill pan to medium-high heat. Lightly brush the zucchini skewers with a portion of the melted garlic butter.
- Grill the skewers for 3-5 minutes per side, turning occasionally, until the zucchini is tender-crisp and has visible grill marks and char. Total cook time is about 8-10 minutes.
- Remove the skewers from the grill and immediately brush generously with the remaining melted garlic butter. The hot zucchini will absorb the glistening, oily butter.
- Serve immediately while the garlic butter is still warm and melted.
Notes
You can use this same garlic butter recipe on yellow squash or even bell peppers. For an indoor option, you can bake these skewers at 400°F (200°C) for 15-20 minutes, brushing with the butter halfway through.
