Ingredients

Pastry Base
  • 1 box puff pastry sheets 2 sheets, thawed
  • 1 large egg for egg wash
  • 1 tbsp water for egg wash
Cream Cheese Filling
  • 4 oz cream cheese softened
  • 2 tbsp granulated sugar
  • 0.5 tsp vanilla extract
Topping
  • 1 cup strawberries diced small
  • 1 tsp sugar for macerating berries
  • 1 tbsp powdered sugar for dusting

Equipment

  • Baking sheet
  • Parchment paper
  • Heart cookie cutter
  • Mixing bowl
  • Pastry brush

Method

  1. Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Unfold thawed puff pastry sheets and cut into heart shapes using a cookie cutter.
  3. Place hearts on baking sheets. Lightly score a smaller heart inside each pastry (don't cut through) to create a border. Prick the center with a fork.
  4. Mix cream cheese, 2 tbsp sugar, and vanilla in a small bowl until smooth.
  5. Place a dollop of cream cheese mixture in the center of each heart.
  6. Toss diced strawberries with 1 tsp sugar and spoon over the cream cheese.
  7. Whisk egg with water and brush the edges of the pastry with the egg wash.
  8. Bake for 15-18 minutes until puffed and golden brown. Cool slightly and dust with powdered sugar.

Notes

Keep puff pastry cold until baking for maximum fluffiness.
