Easy & Tasty Baileys Cheesecake Balls

Indulgent no-bake cheesecake truffles infused with Baileys Irish Cream, coated in white chocolate and drizzled with dark chocolate.

Ingredients
  

Cheesecake Filling
  • 8 oz cream cheese softened to room temp
  • 4 tbsp unsalted butter softened
  • 1.5 cups powdered sugar
  • 3 tbsp Baileys Irish Cream
Coating
  • 12 oz white chocolate chips or wafers
  • 1 tsp coconut oil for thinning
  • 2 oz dark chocolate melted, for drizzle

Equipment

  • Baking sheet
  • Hand Mixer
  • Parchment paper

Method
 

  1. Beat cream cheese and butter in a bowl until perfectly smooth and lump-free.
  2. Gradually mix in powdered sugar, then pour in the Baileys and mix until combined.
  3. Freeze the mixture for 20-30 minutes to firm up.
  4. Scoop tablespoons of mixture and roll into balls. Place on a parchment-lined baking sheet.
  5. Freeze the balls for at least 1 hour until solid.
  6. Melt white chocolate with coconut oil. Dip each frozen ball to coat completely.
  7. Drizzle melted dark chocolate over the tops in a crisscross pattern.
  8. Refrigerate for 15 minutes to set before serving.

Notes

Keep the balls frozen until the very last second before dipping to prevent melting.
