Ingredients
  

Pasta Base
  • 12 oz farfalle pasta (bow-ties)
  • 3 tbsp olive oil divided
  • 2 tbsp butter
Vegetables
  • 2 yellow onions thinly sliced
  • 16 oz cremini mushrooms sliced
  • 5 oz fresh spinach
  • 3 cloves garlic minced
Seasoning & Garnish
  • 0.5 tsp salt plus more for pasta water
  • 0.5 tsp black pepper freshly cracked
  • 0.5 cup parmesan cheese grated

Method
 

  1. Heat 1 tbsp oil and 1 tbsp butter in a large skillet. Add sliced onions and cook over medium heat for 20-25 minutes until caramelized and golden brown. Remove and set aside.
  2. Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
  3. In the same skillet, add remaining oil and butter. Sauté mushrooms over medium-high heat for 5-7 minutes until browned.
  4. Add minced garlic to mushrooms and cook for 1 minute. Add spinach and cooked onions back to the pan, tossing until spinach wilts.
  5. Add cooked pasta to the skillet. Toss with a splash of pasta water to create a light glossy sauce. Season with salt and pepper.
  6. Serve hot garnished with parmesan cheese.

Notes

Ensure onions are cooked slowly to bring out their natural sweetness without burning.
