Fast & Easy Mediterranean Baked Fish

A healthy, flavor-packed dinner ready in 25 minutes. Flaky white fish fillets are baked with bursting cherry tomatoes, garlic, lemon, and fresh herbs in a glossy olive oil sauce.

Ingredients
  

Main
  • 4 fillets white fish (Cod, Halibut, or Bass) approx 6oz each
  • 2 cups cherry tomatoes
  • 0.5 red onion thinly sliced (optional)
Sauce & Seasoning
  • 0.25 cup extra virgin olive oil
  • 4 cloves garlic minced
  • 1 lemon half juiced, half sliced
  • 6 sprigs fresh thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika

Equipment

  • Cast Iron Skillet or Baking Dish
  • Small mixing bowl
  • Chef's knife

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Pat fish fillets dry with paper towels to ensure browning.
  3. Whisk olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper in a small bowl.
  4. Arrange cherry tomatoes and onion slices in a baking dish or skillet. Place fish in the center.
  5. Pour the sauce over the fish and veggies. Tuck thyme sprigs and lemon slices around the fillets.
  6. Bake for 12-15 minutes until fish is opaque and flakes easily.
  7. Optional: Broil for 2-3 minutes for a golden color. Serve immediately.

Notes

Serve with crusty bread to soak up the juices.
