Ingredients
  

Cheese Base
  • 10 oz goat cheese softened
  • 4 oz cream cheese softened
  • 1 tbsp honey
  • 0.25 tsp black pepper
Toppings
  • 1 cup pistachios shelled and chopped
  • 1 cup pomegranate seeds
  • 0.5 cup balsamic glaze for drizzling
  • 2 cups arugula for serving

Method
 

  1. In a bowl, mix softened goat cheese, cream cheese, honey, and pepper until smooth. Chill for 10 minutes if too soft.
  2. Scoop tablespoon-sized portions of the cheese mixture and roll into balls.
  3. Place chopped pistachios and pomegranate seeds on a plate.
  4. Roll or press each cheese ball into the nut and fruit mixture to coat.
  5. Arrange balls on a bed of arugula on a serving platter.
  6. Drizzle generously with balsamic glaze just before serving.

Notes

Serve with crackers or baguette slices. Can be made 2 days ahead without the toppings.
