Festive Sugared Cranberry Cheesecake

Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter melted
  • 0.25 cup granulated sugar
  • 1 pinch salt
Cheesecake Filling
  • 32 oz cream cheese room temperature
  • 1.25 cups granulated sugar
  • 0.5 cup sour cream room temperature
  • 2 tsp vanilla extract
  • 4 large eggs room temperature
  • 2 tbsp flour
Topping & Garnish
  • 2 cups fresh cranberries
  • 2 cups sugar divided for syrup and rolling
  • 0.5 cup water
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar

Equipment

  • 9-inch springform pan
  • Electric mixer
  • Roasting pan (for water bath)
  • Mixing bowls
  • Aluminum foil

Method
 

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, salt, and melted butter. Press firmly into a 9-inch springform pan.
  2. Bake crust for 10 minutes. Remove and cool. Reduce oven to 325°F (160°C). Wrap pan exterior in foil.
  3. Beat cream cheese and sugar until smooth. Add sour cream, vanilla, and flour. Mix well.
  4. Add eggs one at a time, mixing on low just until combined. Do not overmix.
  5. Pour batter over crust. Place pan in a roasting pan and fill roasting pan with boiling water halfway up the sides.
  6. Bake 60-75 minutes until edges set and center wobbles slightly. Turn off oven, crack door, and let sit for 1 hour.
  7. Remove from water bath and chill in fridge for 6+ hours.
  8. Make syrup with water and 1 cup sugar. Coat cranberries in syrup, let dry 45 mins until tacky, then roll in remaining sugar.
  9. Whip heavy cream with powdered sugar to stiff peaks. Pipe rosettes on cheesecake and top with sugared cranberries.

Notes

Ensure all dairy ingredients are at room temperature to prevent lumps. The total time calculation excludes the overnight chilling time.
