Method
- Lightly grease your silicone lollipop molds with cooking spray and insert the wooden sticks.
- In a heavy-bottomed saucepan, combine the sugar, light corn syrup, and water. Stir gently off the heat to combine.
- Attach a candy thermometer to the side of the pan. Heat the mixture over medium-high heat until it reaches a boil. Do not stir while boiling.
- Continue heating until the thermometer reads exactly 300°F (149°C), the hard-crack stage.
- Immediately remove from heat. Carefully and quickly whisk in the unsweetened Kool-Aid packet.
- Quickly whisk in the baking soda. The mixture will immediately foam up and bubble. Do not over-mix to preserve the bubbles.
- Working fast, carefully pour or spoon the foaming hot sugar into the prepared lollipop molds.
- Allow the lollipops to cool completely at room temperature for at least 30 minutes until completely hard before removing from molds.
Notes
Caution: Boiling sugar is extremely hot. Handle with extreme care. Keep away from children during the cooking process.
