Ingredients
  

Candy Base
  • 1 cup Granulated White Sugar
  • 0.33 cup Light Corn Syrup
  • 0.33 cup Water
Flavor & Fizz
  • 1 packet Unsweetened Kool-Aid Drink Mix 0.13 oz packet, any color
  • 0.5 tsp Baking Soda
  • 1 spray Non-stick cooking spray for greasing molds

Equipment

  • Heavy-bottomed saucepan
  • Candy thermometer
  • Silicone lollipop molds
  • Wooden lollipop sticks

Method
 

  1. Lightly grease your silicone lollipop molds with cooking spray and insert the wooden sticks.
  2. In a heavy-bottomed saucepan, combine the sugar, light corn syrup, and water. Stir gently off the heat to combine.
  3. Attach a candy thermometer to the side of the pan. Heat the mixture over medium-high heat until it reaches a boil. Do not stir while boiling.
  4. Continue heating until the thermometer reads exactly 300°F (149°C), the hard-crack stage.
  5. Immediately remove from heat. Carefully and quickly whisk in the unsweetened Kool-Aid packet.
  6. Quickly whisk in the baking soda. The mixture will immediately foam up and bubble. Do not over-mix to preserve the bubbles.
  7. Working fast, carefully pour or spoon the foaming hot sugar into the prepared lollipop molds.
  8. Allow the lollipops to cool completely at room temperature for at least 30 minutes until completely hard before removing from molds.

Notes

Caution: Boiling sugar is extremely hot. Handle with extreme care. Keep away from children during the cooking process.
