Fluffy Berry Stack Pancakes

Ingredients
  

Dry Ingredients
  • 1.75 cups all-purpose flour sifted
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
Wet Ingredients
  • 2 large eggs lightly beaten
  • 1.75 cups buttermilk or milk/acid substitute
  • 4 tbsp unsalted butter melted and cooled
  • 1 tsp vanilla extract
For Topping
  • Fresh mixed berries strawberries, blueberries, raspberries
  • Maple syrup
  • Powdered sugar for dusting

Equipment

  • Large mixing bowl
  • Medium mixing bowl
  • Whisk or Spatula
  • Griddle or large non-stick pan
  • Sifter (optional, but recommended)

Method
 

  1. In a large bowl, whisk together the sifted flour, sugar, baking powder, baking soda, and salt.
  2. In a separate medium bowl, whisk together the eggs, buttermilk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients. Mix *gently* until the dry streaks of flour are mostly gone. The batter must remain lumpy; do not overmix.
  4. Let the batter rest for 5-10 minutes at room temperature. The batter will thicken slightly.
  5. Heat a lightly greased griddle over medium heat until a drop of water sizzles and evaporates.
  6. Pour 1/4 cup of batter for each pancake. Cook for 2-3 minutes, or until bubbles break on the surface and the edges look set.
  7. Flip and cook for 1-2 minutes until golden brown. Keep cooked pancakes warm in a 200°F (95°C) oven.
  8. Stack the pancakes, top with fresh mixed berries, dust with powdered sugar, and drizzle generously with warm maple syrup. Serve immediately.

Notes

Using buttermilk is key for fluffiness. If using milk/acid substitute, let it sit for 5 minutes before adding to the batter. Do not overmix the batter!
