Method
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt until well combined.
- In a separate medium bowl, whisk together buttermilk, milk, eggs, melted butter, vanilla, orange zest, and orange juice.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. A few lumps are okay.
- Gently fold in the cranberries. Let the batter rest for 5-10 minutes.
- Preheat a griddle or non-stick skillet over medium heat. Lightly grease with butter or oil.
- Pour 1/3 cup of batter per pancake onto the hot griddle. Cook for 2-3 minutes until bubbles form and edges set.
- Flip carefully and cook for another 1-2 minutes until golden brown.
- Serve warm topped with powdered sugar, extra zest, and maple syrup.
Notes
If using frozen cranberries, do not thaw them before adding to the batter to prevent bleeding.
