Forgotten Cookies

Airy, crisp meringue cookies studded with chocolate chips that cook overnight in a turned-off oven.

Ingredients
  

Meringue Base
  • 2 large egg whites room temperature
  • 0.66 cup granulated sugar superfine preferred
  • 0.25 tsp cream of tartar
  • 1 pinch salt
  • 1 tsp vanilla extract
Mix-ins
  • 1 cup mini chocolate chips semi-sweet
  • 0.5 cup pecans or walnuts chopped, optional

Equipment

  • Stand mixer or hand mixer
  • Baking sheet
  • Parchment paper
  • Large Glass Bowl

Method
 

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a clean, grease-free bowl, beat egg whites, salt, and cream of tartar on medium speed until foamy.
  3. Increase speed to high and gradually add sugar, one tablespoon at a time, beating until stiff, glossy peaks form.
  4. Beat in vanilla extract just until combined.
  5. Gently fold in chocolate chips (and nuts if using) with a spatula.
  6. Drop by teaspoonfuls onto prepared baking sheets.
  7. Place baking sheets in the oven and IMMEDIATELY turn the oven off.
  8. Leave cookies in the unopened oven for at least 8 hours or overnight.
  9. Remove from oven and store in an airtight container.

Notes

Do not open the oven door while cookies are resting! Humidity affects meringues; avoid making on rainy days.
