Ingredients
  

The Roll Ups
  • 4 large flour tortillas burrito size
  • 0.5 lb deli roast beef sliced thin
  • 8 slices provolone cheese
  • 0.5 cup crispy fried onions french fried onions
  • 0.25 cup creamy horseradish sauce or garlic mayo
The Topping
  • 2 tbsp butter melted
  • 0.5 tsp garlic powder
  • 0.5 tsp dried parsley
The Au Jus
  • 1 can beef consommé 10.5 oz
  • 1 tsp Worcestershire sauce optional

Equipment

  • Baking sheet
  • Small saucepan
  • Pastry brush
  • Chef's knife

Method
 

  1. Preheat oven to 400°F (200°C). Grease a baking sheet.
  2. Lay out tortillas. Spread horseradish sauce evenly over each.
  3. Layer 2 slices of cheese and roast beef on each tortilla. Sprinkle with fried onions.
  4. Roll tortillas up tightly. Place seam-side down on the baking sheet.
  5. Mix melted butter, garlic powder, and parsley. Brush over the rolls.
  6. Bake for 12-15 minutes until golden brown and cheese is melted.
  7. Meanwhile, heat beef consommé and Worcestershire sauce in a pan until simmering.
  8. Slice rolls in half or thirds and serve with the hot au jus for dipping.

Notes

Don't overstuff the tortillas or they will be hard to roll. Serve immediately for the best texture.
