French Onion Beef Rice Casserole

Ingredients
  

The Base
  • 1 tbsp olive oil
  • 2 lbs ground beef lean
  • 2 large yellow onions thinly sliced
  • 4 cloves garlic minced
Seasoning & Liquid
  • 1 tsp dried thyme
  • 0.5 tsp dried rosemary crushed
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp Worcestershire sauce
  • 4 cups beef broth
Rice & Creaminess
  • 1 cup long-grain white rice uncooked
  • 8 oz cream cheese softened, cubed
The Cheese Topping
  • 2 cups Gruyere cheese shredded, divided
  • fresh parsley chopped, for garnish

Method
 

  1. Caramelize thinly sliced onions in olive oil in a Dutch oven (20-30 mins). Push aside.
  2. Brown ground beef in the same pot, then drain fat and stir into onions.
  3. Stir in minced garlic, dried thyme, dried rosemary, salt, pepper, and Worcestershire sauce.
  4. Add uncooked rice and beef broth. Bring to a simmer.
  5. Stir in softened cream cheese until melted and smooth.
  6. Cover and simmer on stovetop for 18-20 minutes, until rice is cooked and liquid absorbed.
  7. Preheat oven to 375°F (190°C). Top casserole with 1.5 cups Gruyere cheese.
  8. Bake uncovered for 15-20 minutes until cheese is bubbly and golden. Broil for last 2-3 mins if desired.
  9. Let rest 5-10 minutes, then garnish with fresh parsley and serve.

Notes

Patience is key for truly caramelized onions. Ensure cream cheese is softened for smooth incorporation.
