French Onion Pot Roast

Tender chuck roast braised in a rich caramelized onion gravy, topped with melted Gruyère cheese.

Ingredients
  

The Roast
  • 3 lbs chuck roast boneless
  • 2 tbsp olive oil
  • 1 tbsp dried thyme
Onion Gravy
  • 4 large yellow onions thinly sliced
  • 4 tbsp butter
  • 3 cups beef broth
  • 0.5 cup red wine optional
  • 2 tbsp Worcestershire sauce
Topping
  • 1.5 cups Gruyère cheese grated
  • 0.5 cup Mozzarella cheese shredded
  • 1 loaf baguette sliced and toasted

Method
 

  1. Preheat oven to 325°F (163°C). Season chuck roast with salt, pepper, and thyme.
  2. Sear the beef in hot oil in a Dutch oven until browned (5 mins per side). Remove and set aside.
  3. Add butter and sliced onions to the pot. Cook over medium heat for 25-30 mins until caramelized.
  4. Stir in flour, then deglaze with wine. Add broth and Worcestershire sauce. Return beef to pot.
  5. Cover and bake for 3-3.5 hours until beef is tender. Shred the beef into the gravy.
  6. Top with cheeses and broil for 3-5 minutes until bubbly and golden. Serve with toasted bread.

Notes

Substitute Gruyère with Swiss cheese if needed. Can be made in a slow cooker (Low for 8 hours).
