Fresh Avocado Strawberry Mango Salsa

Ingredients
  

Fruit Base
  • 1 large Mango peeled, pitted, and finely diced
  • 1 cup Strawberries hulled and finely diced
  • 1 medium Avocado pitted, peeled, and finely diced
Aromatics & Seasoning
  • 1/4 cup Red Onion finely minced
  • 1 small Jalapeño seeded and finely minced (optional)
  • 1/4 cup Fresh Cilantro chopped
  • 2 tbsp Lime Juice freshly squeezed (about 1 lime)
  • 1/2 tsp Kosher Salt or to taste

Equipment

  • Sharp Chef's Knife
  • Large mixing bowl
  • Citrus Juicer

Method
 

  1. Wash, prep, and finely dice the mango and strawberries. Add them to a large mixing bowl.
  2. Finely mince the red onion and jalapeño. Chop the fresh cilantro. Add all three to the bowl with the fruit.
  3. Squeeze the fresh lime juice over the mixture and sprinkle with kosher salt. Gently toss to combine the ingredients and evenly distribute the lime juice.
  4. Halve, pit, and carefully dice the avocado. Add it to the bowl.
  5. Using a silicone spatula, gently fold the avocado into the salsa, being careful not to mash it.
  6. For best flavor, cover and let the salsa rest in the refrigerator for 15-30 minutes to allow the flavors to meld. Taste and adjust salt or lime juice before serving.
  7. Serve immediately with tortilla chips, or use as a vibrant topping for grilled fish, chicken, or tacos.

Notes

To make ahead, prep all ingredients except the avocado, lime juice, and salt. Store the prepped fruit and onions in the fridge, then dress and add the avocado just before serving to prevent browning.
