- Wash the exterior of the watermelon. Using a large chef's knife, cut a thick, even round slice (about 1 to 1.5 inches thick) from the widest center part of the melon.
- Using a clean paper towel, gently pat the top surface of the watermelon slice completely dry. This helps the yogurt stick and prevents the toppings from sliding.
- Cut the large watermelon round into 6 to 8 equal triangular wedges (like a traditional pizza) but keep them pushed together in a circle on your serving platter.
- Dollop the Greek yogurt (or mascarpone) onto the slices and spread it out evenly, leaving a small border around the green rind to act as the pizza 'crust'.
- Scatter the sliced strawberries, fresh blueberries, and crumbled feta cheese (if using) evenly over the yogurt layer.
- Sprinkle the freshly chopped mint leaves across the top of the fruit.
- Right before serving, drizzle the honey and the balsamic glaze back and forth over the entire pizza. Serve immediately while cold.
Notes
Chill the watermelon for at least 6 hours before making this recipe for the best texture and flavor. Do not assemble too far in advance or the watermelon will weep water.
