Ingredients
  

The Cocktail
  • 2 oz aged rum or gold rum
  • 3 oz pineapple juice fresh is best
  • 0.5 oz lime juice freshly squeezed
  • 0.5 oz simple syrup or agave nectar
  • 6 fresh cranberries for muddling
Garnish
  • 1 cup crushed ice
  • 3 sugared cranberries
  • 1 wedge fresh pineapple
  • 2 pineapple leaves fronds

Equipment

  • Cocktail shaker
  • Muddler
  • Rocks Glass
  • Fine-mesh strainer

Method
 

  1. Place 6 fresh cranberries and the lime juice in the bottom of a cocktail shaker. Muddle firmly to release juices.
  2. Add the rum, pineapple juice, and simple syrup to the shaker.
  3. Fill the shaker with cubed ice and shake vigorously for 15 seconds until well chilled.
  4. Fill a rocks glass to the top (mounding slightly) with crushed ice.
  5. Double strain the liquid through a mesh sieve into the glass over the crushed ice.
  6. Garnish with a pineapple wedge, upright pineapple leaves, and a cluster of sugared cranberries on top.
  7. Serve immediately.

Notes

To make sugared cranberries: soak berries in simple syrup for 10 mins, let dry for 30 mins, then roll in sugar and dry for 1 hour.
