Ingredients
  

The Fruit
  • 8 large Fresh Strawberries Washed, completely dried, and hulled
The Base and Toppings
  • 1/2 cup Greek Yogurt or Vanilla Ice Cream Divided into serving bowls
  • 2 Tablespoons Sweetened Condensed Milk For drizzling
  • 2 Tablespoons Crushed Pistachios For garnish
  • 2 sprigs Fresh Mint For garnish

Equipment

  • Microplane or Fine Grater
  • Parchment paper
  • Serving Bowls (chilled)

Method
 

  1. Wash the fresh strawberries thoroughly and slice off the green hulls so the base is flat.
  2. Crucial Step: Use a paper towel to dry each strawberry completely. Any residual water will form hard ice crystals that ruin the fluffy texture.
  3. Place the dried strawberries on a plate lined with parchment paper, ensuring they don't touch, and freeze for at least 4 hours, or until rock solid.
  4. Place two serving bowls or glasses into the freezer for 15 minutes to chill before serving.
  5. When ready to serve, place a scoop of Greek yogurt or vanilla ice cream at the bottom of the chilled serving bowls.
  6. Using a fork to hold the strawberry (to protect your fingers from the cold and the blade), vigorously grate the frozen strawberries using a microplane directly over the bowls.
  7. Allow the strawberry snow to pile up naturally into a fluffy mound. Do not press it down.
  8. Quickly drizzle the top of the snow with sweetened condensed milk, sprinkle with crushed pistachios, garnish with fresh mint, and serve immediately.

Notes

Do not grate the fruit ahead of time, as it will melt and then freeze together into a solid block of ice in the freezer. Grate the fruit a la minute (right before eating) for the best snow-like texture.
