Fruit and Cheese Waffle Cone Appetizers

Ingredients
  

The Cones
  • 12 cones Mini Flat-Bottom Waffle Cones Also known as ice cream cups
The Filling
  • 8 oz Sharp Cheddar Cheese Block Cut into 1/2-inch cubes
  • 1 cup Fresh Blueberries Washed and thoroughly dried
  • 1 cup Fresh Raspberries Washed and thoroughly dried
  • 1 cup Fresh Blackberries Washed and thoroughly dried
  • 1 cup Fresh Strawberries Washed, dried, hulled, and sliced or quartered
The Basket Handle
  • 4 slices Pliable Yellow Cheese Like mild Gouda or American cheese, cut into thin strips

Equipment

  • Cutting board
  • Sharp knife
  • Salad Spinner or Paper Towels
  • Bamboo Cocktail Picks

Method
 

  1. Wash all the berries thoroughly and dry them completely using a salad spinner or by gently patting them with paper towels. Moisture will make the cones soggy.
  2. Cut the block of cheddar cheese into uniform 1/2-inch cubes.
  3. Slice the pliable yellow cheese into thin strips, roughly 1/4 inch wide and 3 to 4 inches long, to serve as the basket handles.
  4. Begin assembling by dropping 1 or 2 cheddar cheese cubes into the bottom of each flat-bottom waffle cone to act as a sturdy base.
  5. Layer the blueberries, raspberries, blackberries, strawberry slices, and remaining cheddar cubes inside the cone, allowing the mixture to mound slightly over the top.
  6. Gently bend a thin strip of yellow cheese into an arch over the top of the filling to mimic a basket handle.
  7. Secure the handle by piercing a decorative bamboo cocktail pick through the top center of the cheese arch and down into a piece of fruit or cheese below.
  8. Arrange the finished cones upright on a serving platter and serve immediately.

Notes

Do not assemble these more than 1-2 hours before serving, or the cones will lose their crunch. For extra protection, you can paint the inside of the cones with a thin layer of melted white chocolate and let it harden before filling.
