- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk flour, cocoa powder, salt, and baking powder in a medium bowl.
- In a large bowl, cream softened butter and 1 cup sugar until light and fluffy (3-4 minutes).
- Beat in the egg and vanilla. On low speed, slowly add the dry mixture until just combined.
- Scoop (1 tbsp) and roll dough into balls. Roll in the 1/4 cup of sugar.
- Place on baking sheets. Use the back of a 1/2 tsp to press a deep indent in the center of each.
- Bake for 10-12 minutes. Immediately re-press the indents with the measuring spoon.
- Let cookies cool completely on a wire rack.
- Make the ganache: Place chocolate chips in a heatproof bowl. Heat heavy cream until just simmering.
- Pour hot cream over chocolate. Let sit for 5 minutes. Add vanilla, then whisk from the center out until smooth and thick.
- Let ganache cool and thicken at room temperature for 20-30 minutes.
- Spoon the thick, gooey ganache into the indents of the cool cookies. Top with sprinkles immediately.
- Let set for 1 hour at room temperature or 20 minutes in the fridge.
Notes
Re-pressing the indents immediately after baking is the most important step! This ensures there is plenty of room for the thick, viscous ganache filling.
