Ingredients
  

Wet Ingredients
  • 1 cup unsalted butter melted and cooled
  • 1.5 cups brown sugar packed
  • 0.75 cup pumpkin puree not pie filling
  • 1 large egg
  • 1 large egg yolk
  • 1 tbsp vanilla extract
Dry Ingredients
  • 2.25 cups all-purpose flour
  • 1 tbsp pumpkin pie spice
  • 0.5 tsp salt
  • 1 cup white chocolate chips or semi-sweet

  • Large mixing bowl

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x13 inch pan with parchment paper.
  2. In a large bowl, whisk melted butter and brown sugar until smooth and glossy.
  3. Add pumpkin puree, egg, egg yolk, and vanilla. Whisk until fully combined.
  4. In a separate bowl, mix flour, pumpkin pie spice, and salt.
  5. Fold dry ingredients into wet ingredients using a spatula until just combined. Do not overmix.
  6. Fold in chocolate chips.
  7. Spread the thick batter evenly into the prepared pan.
  8. Bake for 25-30 minutes until edges are golden and center is set but soft.
  9. Cool completely in the pan before slicing to allow them to set.

Notes

For an extra dense texture, blot the pumpkin puree with paper towels before measuring to remove excess water.
