Ingredients
  

Wet Ingredients
  • 1 cup Greek yogurt plain, non-fat or low-fat
  • 0.25 cup milk any kind (almond, oat, dairy)
  • 1 large egg room temperature
  • 1 tsp vanilla extract
Dry Ingredients
  • 0.5 cup cocoa powder Dutch-processed preferred
  • 0.5 cup oat flour or all-purpose flour
  • 0.5 cup granulated sweetener monk fruit or erythritol
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup sugar-free chocolate chips divided

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, whisk together Greek yogurt, milk, egg, and vanilla until smooth.
  3. Sift in cocoa powder, oat flour, sweetener, baking soda, and salt. Fold gently with a spatula until just combined.
  4. Fold in half of the chocolate chips. Pour batter into the prepared pan and smooth the top.
  5. Top with remaining chocolate chips.
  6. Bake for 20-25 minutes. A toothpick should come out with moist crumbs (not wet batter).
  7. Let cool completely in the pan before slicing. Chilling in the fridge improves the fudgy texture.

Notes

Do not overbake! These are meant to be fudgy. If you bake them until a toothpick is bone dry, they will be tough.
