Galaxy Candy Grapes

Ingredients
  

Fruit & Candy Shell
  • 1 lb seedless grapes green or red, washed and completely dried
  • 2 cups granulated sugar
  • 0.5 cup water
  • 2 tbsp light corn syrup
  • 1 dash gel food coloring blue, purple, pink

Equipment

  • Heavy-bottomed saucepan
  • Candy thermometer
  • Bamboo Skewers
  • Parchment paper

Method
 

  1. Wash grapes and dry them thoroughly with paper towels. Skewer 2-3 grapes onto each bamboo stick.
  2. In a saucepan, combine sugar, water, and corn syrup. Stir gently off the heat just to moisten the sugar.
  3. Place over medium-high heat. Do NOT stir once boiling. Boil until a candy thermometer reads exactly 300°F (149°C).
  4. Immediately remove from heat. Add 1-2 drops each of blue, purple, and pink gel coloring. Gently swirl with a clean skewer (do not overmix).
  5. Carefully tilt the pan and quickly dip the skewered grapes into the syrup, twirling to coat evenly. Let excess drip off for 2 seconds.
  6. Place the dipped skewers on parchment paper to harden (takes about 5 minutes). Serve immediately.

Notes

Moisture is the enemy of this recipe. Ensure the grapes are bone-dry before skewering. Do not store in the refrigerator; eat within 1-2 hours of making.
