Ingredients
  

The Bread & Butter
  • 4 slices Texas Toast or thick sourdough
  • 4 tbsp salted butter softened
  • 2 cloves garlic minced finely
  • 0.5 tsp garlic powder
  • 1 tbsp fresh parsley chopped
  • 1 tbsp parmesan cheese grated
The Filling
  • 1 cup mozzarella cheese shredded
  • 1 cup sharp cheddar cheese or provolone, shredded
  • 1 pinch black pepper

Equipment

  • Cast iron skillet or non-stick pan
  • Small mixing bowl
  • Spatula
  • Cheese Grater

Method
 

  1. In a small bowl, combine softened butter, minced garlic, garlic powder, chopped parsley, and parmesan cheese. Mash until a smooth paste forms.
  2. Spread the garlic butter mixture generously on one side of each slice of bread.
  3. Heat a large skillet over medium-low heat.
  4. Place two slices of bread in the skillet, butter-side down.
  5. Layer the mozzarella and cheddar cheese evenly over the bread in the pan.
  6. Top with the remaining slices of bread, butter-side up.
  7. Cook slowly for 4-5 minutes until the bottom is golden brown and crispy. Watch carefully to ensure the garlic doesn't burn.
  8. Flip carefully and cook the other side for 3-4 minutes until golden and the cheese is fully melted.
  9. Slice diagonally and serve immediately.

Notes

Serve with marinara sauce for dipping to make it 'pizza style'.
