Garlic Butter Zucchini Skewers

Ingredients

  • 2 medium Zucchini cut into 1-inch rounds
Garlic Herb Butter Glaze
  • 1/4 cup Unsalted Butter melted
  • 3 cloves Fresh Garlic minced
  • 2 tablespoons Fresh Parsley finely chopped
  • 1/2 teaspoon Flaky Sea Salt adjust to taste
  • 1/4 teaspoon Freshly Ground Black Pepper adjust to taste

Method
 

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Prepare the zucchini by washing and drying them completely. Trim the ends and cut into uniform 1-inch thick rounds.
  3. Carefully thread the zucchini rounds onto the skewers, leaving a tiny bit of space between each piece to allow for proper browning.
  4. In a small microwave-safe bowl (or on the stovetop), melt the butter. Stir in the minced garlic, fresh parsley, salt, and pepper.
  5. Preheat your grill or a large skillet over medium-high heat (about 375-400°F / 190-200°C). ensure the grate is clean and lightly oiled.
  6. Place the prepared zucchini skewers directly onto the preheated grill. Cook for 4-5 minutes per side, or until the zucchini are tender-crisp and have beautiful char marks.
  7. During the last minute of cooking, generously brush the skewers with the prepared garlic butter glaze on all sides.
  8. Remove from the grill and serve immediately while hot, with extra flaky salt if desired.

Notes

Leftovers are best stored in an airtight container in the fridge and gently warmed in an oven or skillet. Avoid the microwave, which turns zucchini soggy.
