- Wash zucchini and trim ends. Use a spiralizer to create zucchini noodles. Set aside on paper towels to absorb excess moisture.
- In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, rice vinegar, cornstarch, and red pepper flakes.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add cubed chicken and cook for 4-6 minutes until golden and cooked through. Remove from pan and set aside.
- Add remaining 1 tablespoon oil to the pan. Add minced garlic and ginger, stir-frying for 30 seconds until fragrant.
- Add zucchini noodles to the pan and toss with tongs for 2-3 minutes. Do not overcook; they should remain crisp-tender.
- Return cooked chicken to the pan. Pour the sauce over the mixture.
- Toss everything together for 1 minute until the sauce thickens and coats the noodles and chicken evenly.
- Remove from heat immediately. Garnish with chopped green onions and serve hot.
Notes
To ensure zoodles are not watery, salt them and let them sit in a colander for 10 minutes before cooking, then squeeze dry. This draws out excess liquid.
