Ingredients
  

Stir Fry
  • 1 lb chicken breast boneless, skinless, cubed
  • 3-4 medium zucchinis spiralized into noodles
  • 2 tbsp olive oil divided
  • 3 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 2 stalks green onions chopped
Stir Fry Sauce
  • 0.33 cup low sodium soy sauce or tamari/coconut aminos
  • 1 tbsp oyster sauce optional
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch optional, for thicker sauce
  • 1 pinch red pepper flakes optional

  • Spiralizer
  • Tongs

Method
 

  1. Wash zucchini and trim ends. Use a spiralizer to create zucchini noodles. Set aside on paper towels to absorb excess moisture.
  2. In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, rice vinegar, cornstarch, and red pepper flakes.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add cubed chicken and cook for 4-6 minutes until golden and cooked through. Remove from pan and set aside.
  4. Add remaining 1 tablespoon oil to the pan. Add minced garlic and ginger, stir-frying for 30 seconds until fragrant.
  5. Add zucchini noodles to the pan and toss with tongs for 2-3 minutes. Do not overcook; they should remain crisp-tender.
  6. Return cooked chicken to the pan. Pour the sauce over the mixture.
  7. Toss everything together for 1 minute until the sauce thickens and coats the noodles and chicken evenly.
  8. Remove from heat immediately. Garnish with chopped green onions and serve hot.

Notes

To ensure zoodles are not watery, salt them and let them sit in a colander for 10 minutes before cooking, then squeeze dry. This draws out excess liquid.
